Then time in the opposite neutral American or French oak, which breathes allowing the wine to evaporate by a few percentage points, further concentrating the Cab's varietal flavor without the additional tannins or weight. This old-school regimen yields a more concentrated wine, that's still light on its feet.

I want to preface this by saying - I AM NOT a dry wine drinker, HOWEVER!! Bentgate surprised me and I am actually a fan! It tastes delicious with Guacamole, Buffalo Chicken Dip and wasn't as tart/puckery as other dry wines! Definite MUST TRY!

Who knew that Lodi could produce one of the best Cabs in the US! I absolutely love the complexity of this wine and many of my friends who are new to this world find it easy on their palate! Just love this wine with a burger, steak, or even dark chocolate covered almonds!
