After initial pressing, the juice is cooled then pumped to a holding tank. A slow temper-ature-controlled fermentation (for up to 30 days) retains precious acidity and freshness. No oak.
Our Zapatazo label is a nod to Argentina's signature dance, the Tango, and refers to a stamp of the foot to mark the close of the dance. We love pairing this Torrontes with guacamole and dancing in the kitchen.
